Caffè Stern Paris: Historic Workshop Reborn as Italian Bistro

In the heart of Paris, at 47 Passage des Panoramas, stands Stern, a historic printmaking workshop that emerged from its slumber on September 18, 2014, donning a new identity as an Italian-style bistro, infused with the Alajmo touch. After seven years of hibernation, Stern has been reimagined to embody the spirit of an era gone by, yet pulsating with contemporary culinary zeal.

A Reincarnation Of Craft And Cuisine

Stern's revival germinated three years prior, during a rendezvous at the "Calandre's" Salle des Chevaliers. The protagonists were Gianni Frasi, the roaster from Verona's "Laboratorio Torrefazione Giamaica Caffè", and the Alajmo brothers, Massimiliano (Max) and Raffaele (Raf).

The vision: breathe life into Stern, not as just another café, but as a tribute to its historic significance – a place for an authentic Italian experience. With the artistry of architect Dominique Averland and the ingenuity of designer Philippe Starck, Stern's metamorphosis was set in motion, preserving the magic while adding Alajmo's culinary finesse.

A Symphony Of Flavors

Starck describes the union as, "The meeting between Stern and the Alajmo brothers is a magical meeting of the minds. Like the engraver Stern, the Alajmo brothers - 2 brothers from Padua, now based in Venice - cultivate excellence and originality... Our contribution has been to give pride of place to magic, poetry, surrealism, and, of course, food."

Under the guidance of Max Alajmo, Caffè Stern orchestrates an Italian culinary symphony that's both profound and contemporary. Denis Mattiuzzi, a pupil of Max Alajmo, helms the kitchen, translating Max's culinary philosophy into reality. Lunch and dinner menus echo the essence of Italian and Venetian gastronomy.

Classics like Cappuccino 'alla bolognese', Tagliolini with dill, lobster, pagre, and pistachio sauce, and Veal liver 'alla veneziana' grace the selection. Seasonal creations like Beetroot tartare with purslane salad, Mushroom risotto with pine nut cream, and Crispy suckling pig with Corona bean purée offer delightful variety. Desserts, including Panettone Marrakech with praline cream, pay homage to SESAMO, the Alajmo brothers' masterpiece in Marrakech.

A Gourmet Oasis In Paris

Caffè Stern boasts a variety of daily offerings, from à la carte indulgences to chef's specials. A dynamic team led by Eufemia Demuro complements the experience with an extensive wine selection from Italy and France. The iconic Alajmo Spritz finds its place as the perfect aperitif.

The historic ambiance, replete with antique woodwork and 16th-18th century furniture, envelops guests in a welcoming embrace. Max Alajmo sums it up beautifully, "Caffè Stern is an informal place where people should feel at ease. The kitchen is a declension of Italian expressions, simple but thoughtful."
