A Journey Through History
Nestled within the storied grounds of the Château de Saint-Vrain, Le Doyenné is a triumphant celebration of heritage and creativity. The château, which once served as the country retreat of the Countess du Barry and the Borghese family, has stood for centuries. Today, it finds new life as the backdrop to a remarkable journey led by chefs James Henry and Shaun Kelly. The location is steeped in history; a place where renowned artists Niki de Saint Phalle and Tinguely once created their monumental sculptures in the 1970s.
The visionaries behind Le Doyenné, along with the Mortemart family who own the estate, have painstakingly transformed the château's former stables into a masterpiece of architectural restoration. With the collaboration of architectural firms ciguë and 1024, the exterior renovations honor the site's historical significance. Inside, the Doyenné team drew upon local craftsmanship to preserve the site's integrity while reimagining its interior as a dream farmhouse.
A Culinary Odyssey
In 2023, Le Doyenné garnered accolades and recognition that underscore its commitment to excellence. Le Fooding and Time Out crowned it the best restaurant of the year, while the Michelin guide bestowed a green star for its dedication to sustainable cuisine. What sets Le Doyenné apart is its "garden to plate" philosophy, where culinary creations are rooted in the rhythms of the earth.
The journey begins at the kitchen garden, a testament to regenerative agriculture. Inspired by French market gardeners and the ethos of sustainability, the chefs have cultivated the once-dormant walled garden since 2017. Rejecting modern plowing practices, they prioritize gentle decomposition through compost and mulch, preserving centuries-old microbial life. Over the years, fruit trees, shrubs, heritage vegetables, and herbs have been carefully nurtured, shaping the ever-changing menu.
Embrace The Seasons
The heartbeat of Le Doyenné is the rhythm of seasons and micro-seasons that dictate the menus. Each morning, the kitchen team harvests the freshest ingredients from the garden, ensuring peak flavors. Game, poultry, and dairy products are produced on-site with unwavering integrity. The commitment to seasonality extends beyond vegetables, encompassing oysters, game, and cheeses.
As the seasons evolve, the menu transforms. Summer delights in the garden's bounty, while autumn introduces wild mushrooms and game. Winter embraces the Atlantic Ocean's offerings. The wine selection mirrors the agricultural ideals of Le Doyenné, prioritizing vineyards that share its commitment to sustainability.

The Chefs Behind The Vision
James Henry and Shaun Kelly, the culinary minds behind Le Doyenné, bring a wealth of experience and a shared passion for sustainable practices. James' culinary journey began in Australia, followed by international ventures. In Paris, he opened the iconic Bones restaurant.
